Butternut Squash Chocolate Chip Bread
Ingredients:
1 cup brown sugar
1 egg
1 cup of cooked butternut squash
¼ cup of vegetable oil
⅓ cup of plain yogurt
1 tsp vanilla extract¾ cup white flour
1 cup whole wheat flour
1 ½ tsp baking powder
½ tsp baking soda
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
1 cup chocolate chip
Recipe
1. Whisk together the brown sugar and the egg.
2. Add 1 cup of cooked butternut squash, ¼ cup of vegetable oil, ⅓ cup of plain yogurt, and 1 tsp vanilla extract.
3. In a separate bowl, mix the dry ingredients-white flour, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, salt. Stir everything until just combined.
4. Add the dry ingredients to wet ingredients and mix until just combined. Add about 1 cup of chocolate chips.
5. Pour mixture into a 9-inch loaf pan that has been greased and floured. Bake at 350 degrees F for 45-50 min until toothpick comes out clean.
