Ingredients:
2 eggs
1/8 teaspoon kosher salt
1/8 teaspoon black pepper
1 tablespoon butter

Tools:
bowl
fork
cast iron skillet or nonstick pan
rubber spatula

Preparation:
Step 1: In a bowl, crack the eggs, add the salt and pepper, and whisk the eggs.
Step 2: In a seasoned cast iron skillet or nonstick pan over low to medium heat, melt the butter.
Step 3: Once the butter has melted, pour the whisked eggs into the skillet. Cook the eggs low and slow. Don’t rush to stir them. Wait for curds to form.
Step 4: Once the eggs begin to curdle and cook on the sides, use a spatula to push the cooked egg to the center of the pan.
Step 5: Tilt the pan to let the uncooked egg go to the edges.
Step 6: Continue to do this until the eggs are set, pushing them to the center as they cook.
Step 7: Transfer the eggs to a plate.
