This sandwich can be made veggie/vegan very easily and I will add the recipe for crispy tofu so you don't have to miss out on this gorgeous creation.

Marinara or Pizza sauce (if you are in a pinch)
Veal or eggplant or crispy tofu
Giardiannara
Cinco Formaggio (Quatro is absolutely acceptable)
Caramelized onions
olive tapenade
