primary structure:
- pitches, low to high = hydrophobic to hydrophilic, W Y F M L I C V G A P S T H N Q R K D E
— hydrophobic amino acids are male voices with various vowel sounds; G and P are consonants (fricatives);
— hydrophilic amino acids are female vowel sounds

secondary structure:
- coil is very fast
- beta sheets are a little slower, marked with a wooden guiro
- alpha helices are slower still, marked with a triangle
- turns are “key changes” - the music keeps going but its tonic has changed.
