There was always this world in confectionary that fascinated me when savoury elements & classical flavour combinations that symobilised a "perfect union" when plated. Pork, Apples & Fennel is one of those combinations we know of, whether it's sausage rolls, pies or even just a Sunday roast with those ingredients make you smile on the inside (obviously not for the non-meat eaters!). This has to be one of new favourites because creating the individual components were a lot of fun and it simply sings on your palate! Green Apple & Fennel Pollen gel with a Bacon Praline - the base Praline is a Hazelnut & Almond praline which is then mixed with locally sourced bacon, cooked to a desired Crisp, then grounded in.
