With the ethos “a conversation between nature and the soba maker”, Obinata’s produce has chiefly focused on juuwari soba varieties. Sarashina Hachiwari is born of a desire to retain the flavor of pure soba while pursuing desirable ‘nodogoshi’— the feel of the food when swallowing. This is achieved by using eight parts of number one flour (with buckwheat that retains the epidermis in refined form) and a dash of wheat flour. It is delicate work. Reduced boiling time and thorough washing bring the soba’s unique qualities to the fore. This dried noodle cannot be looked down upon. Delicious.
This pleasant interpretation includes kakiage mixed tempura made with the seven herbs known as nanakusa.
