These anthocyanin-rich fruits serve as excellent antioxidants and have always appeared in the list of superfoods. Berries are also one of the natural foods most frequently associated with today’s trending keyword, “well-aging.” Since
the mid-2000s, berries have been in the spotlight, along with root vegetables and herbs, as one of most representative Nordic flavors, thanks to the rise of the New Nordic Cuisine movement which has suggested a new culinary culture focusing on wild, local harvests.
