By 1943 canned foods were rationed due to the military’s need for food and metal. Americans had to start eating more fresh vegetables from their local grocer or grow them themselves. “Victory Gardens”, as these home grown gardens were called sprung up in backyards, vacant lots and any container that could hold dirt. Some of the scarecrows used in the gardens were made to look like Hitler, Hirohito, or Mussolini. After the garden was harvested families “canned” their vegetables in glass jars to eat during the colder winter months. At the height of the war over 20 million Victory gardens were growing in the U.S., supplying a third of all the vegetables in the country. Many Americans had never grown a garden before so manuals for the inexperienced farmer were published. Children were very important to the Victory Garden’s success since they often helped plant, water, weed and harvest the vegetables.
