One Pot Italian Pasta-inspired by @TheKitchn

Ingredients

* 6 C water
* ¼ C and 1 T tomato paste
* 1 cup sun-dried tomatoes, chopped OR 2 cups halved cherry tomatoes. (If using cherry tomatoes, reduce the tomato paste by half)
* ½ C black olives-either Kalamata or Gaeta work best, but use what you have on hand
* 1 c. sweet peppers
* 1 tsp ground pepper
* 1 T kosher salt
* 1 tsp oregano
* 12 oz pasta (works best with long style pasta, but you can use whatever you have-a box is usually 16 oz, use ¾ of the package-I used Rotelle)

To Finish

* Fresh basil to taste
* ½ grated parmesan
* 2 T diced scallions

In a large lidded pot, combine all the ingredients. Water, tomato paste, peppers, sun dried tomatoes, olives, oregano, salt and pepper. Cover and bring to a boil, stirring frequently to prevent pasta from sticking.

Once it reaches a full boil reduce heat slightly and cook for 8-10 minutes or until liquid has nearly evaporated, or been reduced to a sauce consistency. Remove from heat and add scallions, fresh basil and parmesan to finish.
