Komoro Shichibei soba exudes a gnarled, rough-cut impression. This rare make of dried soba is often praised for the anticipation of ‘exquisite entwinement with dipping sauce’. Three-time winner of the Monde Selection Award for fine foods in 2007, 2012 and 2016, Komoro Shichibei has also featured on popular Japanese television show ‘Matsuko no Shiranai Sekai’ (Matsuko’s Unknown World).
With a boiling time of four to five minutes recommended by the maker, daring to reduce this to three minutes allows one to maximise the elastic, springy texture and mouthfeel characteristic of thicker-cut noodles such as this. It is also recommended that ice be used for rapid chilling, as ‘Tsukejiru soba’ (soba with dipping sauce) is more enjoyable the more extreme the temperature difference. Tinned mackerel was used in place of duck as a sort of parodic allusion—an experiment to see if tinned fish can surpass duck, if you will (^^;).
This soba invites experimentation with any punchy ingredients, and do not forget the soba tea!
